Easy Feta Summer Salad

The Taste of Summer

We are nearing Labor Day here in the US and that means summer is on it’s way out, at least in the Midwest. During my Keto moments I discovered many uses for cauliflower and found a way to use it to make a version of tabbouleh, which is a Middle Eastern dish. This feta summer salad, with the fresh veggies and lime, just taste like summer… and it tastes better the next day. (Jump to Recipe or Print Recipe)

What You’ll Need

This salad has pretty easy to grab ingredients  and many of them may already be on your shopping list. Besides the feta, this feta summer salad will need some olive oil, cauliflower, a lime, red bell pepper, an english cucumber, parsley, cilantro, mint, a shallot, crushed red pepper flakes, cumin and salt.

Let’s Get Started

summer feta saladStart by making the dressing. combine the olive oil, lime juice, cumin and salt… set it aside. Next, mix the cauliflower, cucumber, bell pepper, parsley, mint, cilantro, and shallot. I diced the cucumber and pepper but pulsed the cauliflower, shallot, mint, parsley, and cilantro in the food processor. You want them smaller than chopped but not pulverized, so just pulse.  Then, add the red pepper flakes and dressing. Lastly, add the feta and mix the salad.

Transfer the salad into a serving bowl and either serve immediately or cover and refrigerate. This salad is better the next day, in my opinion, and would be perfect for a make ahead item.

Feta Summer Salad

Easy summer dish, perfect for low carb diets.

Course Salad

Ingredients

  • 3 TBSP lime juice fresh is best
  • 1/4 cup olive oil
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/2 head of cauliflower
  • 1/2 english cucumber
  • 1 red bell pepper
  • 1 cup parsley
  • 1 cup cilantro leaves
  • 1 cup mint
  • 1 shallot
  • 1/4 tsp red pepper flakes
  • 1/4-1/2 cup feta add as much as you'd like

Instructions

Dressing

  1. Combine olive oil. salt, cumin, and lime to make dressing and set aside

Salad

  1. Pulse cauliflower in a food processor to chop and place in mixing bowl

  2. Pulse parsley, mint, cilantro, and shallot to chop, either together or separately, depending on size of food processor, and add to cauliflower

  3. Dice cucumber, pepper, and add to cauliflower

  4. Add dressing, pepper flakes, and feta, then mix

  5. Transfer salad to serving dish to serve immediately or refrigerate for later

Recipe Notes

This salad serves about 6 people with about 6 net carbs per serving. If you don't have a food processor, use a grater on the cauliflower and chop other ingredients well.
