Quick, Easy, and Delicious
In the quest to find family dinner favorites I have found one that not only works, but it is a super easy chicken recipe! I have 4 children, whom all don’t like the same things, but this is this kid tested, my 15 year old actually said she prefers these to the fajitas!
Honestly, this easy chicken recipe couldn’t really get any easier, it only has a few ingredients, and cooks on a sheet pan or cookie sheet… making clean up super easy. Not to mention that I think it is better the next day AND great cold, making it perfect for salads too!
I’m going to include a print out version of the recipe below… because you are going to want to make this, but here’s what you’ll need…
- Spices (parsley, salt, and pepper)
- Chicken breast or thighs
- Veggies (bell peppers, zucchini, onions)
- Olive oil, lemon juice, and minced garlic
Preheat your oven to 400 degrees and grab a cookie sheet. Put foil on your cookie sheet and set aside, this is going to make clean up even easier. Then, mix spices together into small bowl and set aside. Next, start cutting your veggies into strips. Once done put the veggies onto the foil lined cookie sheet. Then, cut your chicken into strips or chunks.
After the above, place the chicken and veggies onto the cookie sheet. Toss with the olive oil, minced garlic, and lemon juice. Next, mix in the spices, carefully… side note… if you wanted to mix it all in a bowl and pour onto sheet pan, that is an option too, but it’s just one more dirty dish… no thanks!
Put the pan into the oven and bake for about 20 minutes. Serve with rice.
We don’t usually have any leftovers, but if making for yourself or plus one, you could enjoy warm for dinner and then cold on a salad… with feta and balsamic vinaigrette!

Easy Chicken Recipe
- 1-1.5 pounds Chicken either breasts or thighs
- 1-2 Zucchini 2 if small, 1 if large
- 1 Onion red or yellow
- 3 Bell Peppers nice size and sometimes I use 4 - one of each color (red, yellow, orange, and green
- 1/2 tsp Minced Garlic prepackaged garlic
- 2 tbsp Olive oil or coconut oil
- 1 Lemon cut in half
- 1 tbsp Parsley
- 1 tsp Salt
- 1/2 tsp pepper
Preheat the oven to 400 degrees and line your cookie sheet or sheet pan with foil... set aside.
Cut veggies and meat and add then add them to the sheet pan.
Toss the meat and veggies with the oil, garlic, and spices. Squeeze half of the lemon on the mixture and toss again.
Place in oven for 20 minutes. Squeeze other half of lemon on mixture after backed, stir, and serve with rice is desired.
This makes a great salad. If you're looking for an easy work lunch, make this on Sunday and divide among 4-5 dishes, add feta and dressing... and enjoy!
