Avocado Chocolate Pudding

Pudding is a very simple but delicious treat. Children tend to like it and it is easy to make, the only problem I have is, I don’t like eating from boxes unless it is necessary and I tend to buy few things that way. I don’t like preservatives, and in general, you can’t get away from them entirely, but the less boxed food the better. This includes pudding.

Ingredients avocado pudding  Most store bought puddings include preservatives and artificial colors and flavors, so we have avoided them, and I haven’t found a recipe that I really like, either I don’t have the time, or will lol, to boil and chill, as the idea of pudding is always last minute, or I don’t like the milk heavy recipes, as not everyone is milk tolerant. So, when I saw the recipe for avocado chocolate pudding, I had to try it.

This recipe calls for 1 avocado, 6 Tbsp of milk (cow’s, coconut or whatever milk you like), 1/4 cup of coco powder, 1/4 cup maple syrup and 1 tsp of vanilla.

Essentially, you just peel and pit your avocado and put all ingredients into a food processor or mixer and viola! What you have is a very nice chocolate pudding. I served it straight from the processor but it could be chilled.

I will mention that this is a very rich chocolate pudding with a wonderful flavor, you don’t taste the avocado and 1 of my children licked their bowl, not to mention they loved making it! Also, the above recipe made 1 cup, so figure on doubling or tripling, depending on serving size, but remember it is rich, so a little goes along way.

I would like to tinker with this recipe to make more flavors, maybe with banana, maybe with mint and when I do, I will let you know how they turn out. Until then…grab yourself a few avocados and give this recipe a try and the great thing about this recipe is that if you don’t get to the pudding, you can make guacamole!

Update: I wanted to try making chocolate banana pudding, so I doubled all of the ingredients except for the avocado. I weighed my avocado and weighed unpeeled bananas until I got a close weight to the avocado weight, I ended up using 1 and a quarter banana, but weights will differ. I then blended the doubled ingredients, the avocado and the banana just like above and there you have it… chocolate banana avocado pudding. I would note, for a lesser banana taste go for less ripe/more green banana and for more banana flavor go for riper/more yellow bananas. Enjoy!
